Avocado, Tomato & Mozza Salad
This Keto friendly salad is bursting with flavor, very filling and great with any meal. The fresh herbs and spices bring out the flavors in the fresh cucumbers and tomatoes with just the right tanginess of the lime and capers. This recipe makes about 8 servings where a serving size is one cup.
3 Ripe Organic Avocados peeled and diced
1 Medium Chopped Red Onion
8oz. Fresh Mozzarella Cheese Diced Small
6 Baby Cucumbers Largely Diced
10 Small Campari Tomatoes Largely Diced
1/3 Cup of Capers
1/3 Cup Lime Juice
2 Tablespoon Italian Seasoning
1 Tablespoon Organic Extra Virgin Olive Oil
1/2 Teaspoon Pink Himalayan Sea Salt
2 Teaspoon Cracked Black Pepper
Once peeled & diced immediately marinate the avocados with the lime juice, capers, pink Himalayan sea salt and the cracked black pepper. Let it marinate while preparing the remainder of the ingredients to keep the bright color of the avocados.
In a large mixing bowl add all the remaining ingredients together: red onions, mozzarella cheese, baby cucumbers, tomatoes, Italian seasoning, extra virgin olive oil
Fold in the avocado mixture with minimal manipulation
Add more cracked black pepper and sea salt to taste.
Cover and let it marinate a few hours in the refrigerator giving the veggies time to absorb all the flavors.
