Cauli-Kale Cheesy Casserole

This recipe is Keto friendly, very filling and a perfect way to add phytonutrients to your Keto lifestyle. One serving size is about 1/2 to 1 cup yielding about 10 to 12 servings.


Ingredients:

  • 12oz Bag Chopped Organic Kale

  • 4 Cups Chopped Organic Cauliflower (2.5 Large Cauliflowers)

  • 6 to 8oz Organic Shredded Mozzarella Cheese

  • 2 Cups Shredded Sharp Cheddar Cheese

  • 1/2 Cup Organic Heavy Cream

  • 1 Cup Organic Sour Cream

  • 1 Tablespoon Ground Cumin

  • 1/2 Teaspoon Pink Himalayan Sea Salt

  • Small Package of Real Beacon Bits

  • 2 Tablespoon Grass Fed Ghee Butter


Kale Preparation:

  1. Using a large food processor chop the kale into very fine pieces.

  2. Using a nonstick pan sauté the kale on very low heat with 2 tablespoon grass fed ghee butter.

  3. Add 1 cup of organic sour cream

  4. Add 1/2 teaspoon of pink Himalayan sea salt.

  5. 1 tablespoon ground cumin

  6. Stir frequently until creamy for about 10 to 15 minutes, but keep the brightness of the kale


Cauliflower Preparation:

  1. Pre-heat the oven at 350 degrees.

  2. Boil or bake the cauliflower until tender with a folk. If you choose to boil the cauliflower you'll need to remove the excess water by using a cheese cloth to squeeze out the water. Be sure to ware rubber lined gloves to prevent being burned.

  3. While still warm add the organic heavy cream to mash the cauliflower unit creamy. You can also use a food processor to help reduce pre time.

  4. Add 1 tablespoon of Pink Himalayan sea salt or to taste.

  5. Stir in the shredded mozzarella cheese.


Casserole Preparation:

  1. Using a 28 liter Corning Ware/Pyrex type dish spread 1/2 the cauliflower mixture over the entire bottom of the dish.

  2. Add a layer of sharp cheddar cheese

  3. Add a ALL the Kale mixture.

  4. Add another layer of sharp cheddar cheese (optional)

  5. Add the other 1/2 of the cauliflower mixture

  6. Add a layer of sharp cheddar cheese

  7. Sprinkle the real beacon bits to your liking.

  8. Bake for about 5 to 10 minutes just to help melt all the cheese layers together.


Note: You don't have to use organic ingredients, but if you want to remove toxins, herbicides and pesticides from your diet; organic is the way to go!
