Spicy Black Beans

Spicy Black Beans by Trina

This recipe is very versatile as it can be eaten pureed, cold or hot and great with many of your other favorite dishes. If you love spicy food you will love this dish. One cup is a serving size with approximately 227 calories.


Ingredients:

  • 16 oz Bag of Uncooked Black Beans

  • 1/2 Tbsp. Olive or Avocado Oil

  • 1.5 Cup of Lemon Juice

  • 1/3 Cup of Onion Powder

  • 1/3 Cup of Lemon Pepper

  • 1/3 Cup of Garlic Powder

  • 1/3 Cup of Garlic Pepper

  • 1/3 Cup of Ground Cumin

  • 1 Cup Zatarain's Blackened Seasoning

Preparation:

  1. Using a colander rinse the black beans thoroughly to remove any debris from the packaging.

  2. Follow the Quick Soak or Overnight Soak provided on the package with the exception of adding 1/2 cup of lemon juice.

  3. After soaking the beans; retain all the liquid, add the oil plus all dry ingredients then bring to a boil or place on low in a slow cooker over night.

  4. Stove top preparation: Reduce the heat to simmer for about 1.5 to 2 hours stirring occasionally.

  5. Taste occasionally to make sure the beans are soft; add additional seasonings to your liking.

Notes:

  • If you need to add a cup or more of liquid heat your desired amount of water + 1/2 cup of lemon juice + a tablespoon of each dry seasonings blend all together than add to beans to maintain the spiciness of the recipe.

  • If you are not a fan of spicy foods simply reduce all dry ingredients to 1/4 cup or less.

Serving Ideas:

  • Un-Pureed Dish Ideas - Add to Nachos, Tacos, Top of Baked Potatoes, Side Dish, Brown Rice with or without Sausages.

  • Pureed Dish Ideas - Veggie Dip, Substitute for Sandwich Spread, Creamy Soup by adding more of the bean broth.
