Trina's Eggbites

This recipe was inspired by the delicious Star Bucks egg bites minus the preservatives and at a lessor cost; each bite is approximately 130 calories.

Equipment Needed:


2 Cups of egg whites 1 Cup of chopped red onions

1 Whole egg 1 Cup of chopped deli meat (chicken, turkey,

2 Cups of fresh spinach roast beef or your favorite mushroom)

1 Cup of Jillian cut sun dried tomatoes 1/4 Cup of heavy cream or half & half

1 Cup sliced jalapeno peppers (optional) 2 Cups of sharp cheddar cheese

1 Cup of Parmesan cheese

Recipe Instructions:

  • Pre-heat oven at 375 degrees

  • Spray muffin pan with olive oil even if you have non-stick muffin pans.

  • In the mixing bowl, whip the egg whites and whole egg until blended

  • In the food processor, mix the following ingredients until tooth paste consistency:

Spinach, Red Onions, Sun Dried Tomatoes, Chopped Deli Meat or Mushroom, Jalapeno Peppers, Heavy Cream or Half & Half

  • Combine the processed ingredients with the egg mixture until fully combined

  • Add the sharp & Parmesan cheese into the mixture

  • Spoon the mixture into the muffin cups with approximately 1.5 tablespoons leaving enough room to rise.

  • Bake approximate 25 to 30 minutes or until golden brown.
