Trina's Eggbites
This recipe was inspired by the delicious Star Bucks egg bites minus the preservatives and at a lessor cost; each bite is approximately 130 calories.

Equipment Needed:
Large Spoon
Mixing Bowl
Ingredients:
2 Cups of egg whites 1 Cup of chopped red onions
1 Whole egg 1 Cup of chopped deli meat (chicken, turkey,
2 Cups of fresh spinach roast beef or your favorite mushroom)
1 Cup of Jillian cut sun dried tomatoes 1/4 Cup of heavy cream or half & half
1 Cup sliced jalapeno peppers (optional) 2 Cups of sharp cheddar cheese
1 Cup of Parmesan cheese
Recipe Instructions:
Pre-heat oven at 375 degrees
Spray muffin pan with olive oil even if you have non-stick muffin pans.
In the mixing bowl, whip the egg whites and whole egg until blended
In the food processor, mix the following ingredients until tooth paste consistency:
Spinach, Red Onions, Sun Dried Tomatoes, Chopped Deli Meat or Mushroom, Jalapeno Peppers, Heavy Cream or Half & Half
Combine the processed ingredients with the egg mixture until fully combined
Add the sharp & Parmesan cheese into the mixture
Spoon the mixture into the muffin cups with approximately 1.5 tablespoons leaving enough room to rise.
Bake approximate 25 to 30 minutes or until golden brown.
